Alentejo Sheep Milk Cheese

The region produces high-quality varieties of sheep milk cheese. These cheeses can be buttery, with a semi-soft paste and shorter ripening period, or semi-hard to hard as a result of longer ripening stages. They can also be preserved in paprika, salt or olive oil. With an extraordinary range of textures and flavours available, the only difficulty will be choosing just one.
